Jerk Steak (BBQ Gas Grill): Family Dinner Recipe

You will need:
4 Small to Medium  Beef steak  (do not trim fat)
8 Tablespoon Reggae For You Nuff Jerk sauce
Salt to taste (optional) (add just before cooking, or when cooking)
50 ml Reggae For You Hot Pepper Sauce (hot sauce). For extra heat (optional)

Prep: 15 – 20 minutes.  Cook Time 30 – 45 minutes. Serves 4

Directions
Prep Ingredients: Crush green onion then chop. In crush garlic.  Add green onion, garlic. Taste Reggae For You Nuff Jerk to determine whether to add more salt. Crush whole spice (5 pcs)

Remove chicken from refrigerator, drain all liquid. With pieces in bowl, use hand towel to absorb as much of the liquid from container and discard hand towel immediately.

Add green onions, garlic, all spice and Reggae For You Nuff Jerk Sauce, rub to spread mixture over chicken and under the skin.  Add more Jerk sauce is necessary.  Need it really spicy? Add our Hot Pepper Sauce (hot sauce). Cover tightly with saran wrap and marinate for 6 – 12 hours in refrigerator.  Do not leave on the kitchen counter or at room temperature.

Put iron skillet or cast iron pot on grill or grilling pan to heat.  Remove marinated chicken from refrigerator, add salt only if needed, to taste.   When hot, place chicken skin side up.  Reduce heat.  Cover grill.  If you are not using a grilling pan or skillet, grille should be very hot.  If not hot meat will stick to grille.  Once meat is placed on grille reduce heat and close grille for 10 – 15 minutes.  Turn pieces after 10 – 15 minutes with skin side down.  Close grille let cook for 10 – 15 minutes.   Breast and thigh will cook at different times check to ensure cooking. Cook until there is no pink.  During cooking, any juices from pan can be brushed on chicken.  When chicken is cooked and there is no pink, you may use (fresh not the one in marinating container) jerk sauce brush on both sides of chicken remove from grill and let sit.

Tip:  Add salt to meats just before cooking.  When salt is added too early it absorbs and the juices from the meat drains and meat loose it’s flavour or becomes dry after cooking.  Jerk chicken will have some char on it, but should not be burnt.  Use chicken back to make soup or chicken stock.
