Jerk Chicken (BBQ Wood Stove): Family Dinner Recipe

You will need:
1 whole chicken (small) 1 kg (keep skin on to retain moisture)
100ml – 120ml Reggae For You Nuff Jerk sauce
1 stalk scallion or green onion
2 cloves garlic (medium)
5 whole all spice (crush)
Salt to taste (optional) (add just before cooking, or when cooking)
50 ml Reggae For You Hot Pepper Sauce (hot sauce). For extra heat (optional)

Prep Time: 30-40 mins.  Cook Time 45 mins. Serves 6-8

Directions
Remove chicken: legs, thigh, wings, breast, and cut in 2, keep skin on. Remove and freeze the back if not being used. Place in bowl, squeeze one medium lemon, chopped 1 stalk green celery.  Pour 1 cup cold water on chicken cover. Refrigerate 30 mins.

Prep Ingredients: Crush green onion then chop. In crush garlic.  Add green onion, garlic. Taste Reggae For You Nuff Jerk to determine whether to add more salt. Crush whole spice (5 pcs)

Remove chicken from refrigerator, drain all liquid. With pieces in bowl, use hand towel to absorb as much of the liquid from container and discard hand towel immediately.

Add green onions, garlic, all spice and Reggae For You Nuff Jerk Sauce, rub to spread mixture over chicken and under the skin.  Add more Jerk sauce is necessary.  Need it really spicy? Add our Hot Pepper Sauce (hot sauce). Cover tightly with saran wrap and marinate for 6 – 12 hours in refrigerator.  Do not leave on the kitchen counter or at room temperature.

Heat grill to 300 degrees Celsius. Remove marinated chicken from refrigerator, add salt only if needed, to taste. When grille is hot, place chicken skin side up.  Reduce heat.  Cover grill. Grill must be hot.  If not hot meat will stick to grille. Once meat is placed on grille reduce heat and close grille for 10 – 15 minutes.  Reduce heat by moving wood away from the area directly under meat Turn pieces after 10 – 15 minutes with skin side down. Close grille let cook for 10 – 15 minutes. Breast and thigh will cook at different times check to ensure even cooking. Cook until there is no pink.  During cooking, any juices from marinating pan can be brushed on chicken.  For a smoky taste splash your favourite beer or use tap water to splash on wood flame.  Use a plastic bottle with a very small hole, so avoid outing flamed. Then cover. When chicken is cooked and there is no pink, you may use fresh (fresh jerk sauce not the one in marinating container) jerk sauce brush on both sides of chicken remove from grill and let sit.

Tip:  Add salt to meats just before cooking.  Jerk chicken will have some char on it, but should not be burnt.  Use chicken back to make soup or chicken stock.  Drinking beer with spicy food, elevates the spicy level from carbonating effect of beer.
