Jerk Chicken Breast

You will need these ingredients:
2 small  chicken breast, boneless, skin off
1 small -medium lime
1/4 teaspoon spoon salt
3-4 table spoon Reggae For You Jerk sauce
2 slices medium onion
3 table spoon olive oil or Coconut Oil
Cook time 10-12 minutes (small to medium breast)

Prep  15 min. Cook 20 – 25 min Serves 2

Directions
Slice chicken breasts from thickest to thin tip, open, do not cut in two. Cut and squeeze half lemon juice over breasts. Leave 2 minutes. Add salt and pour 3 tablespoon Reggae For You Jerk Sauce cover entire chicken. Place skillet on grille to heat (breast may burn and dry too quickly directly on grille). Add 1 tablespoon  oil to skillet.  Place breast in hot skillet. Drizzle remainder of oil over chicken. Cover grille. Cook 5 minutes then turn on each side, reduce flame. Lift and place onions under chicken breasts.  Cover grille.  Add More oil or jerk to chicken if needed to avoid chicken being dry. Turn off grille.  Place onions on jerk chicken breast. Serve with grilled carrots, and smashed, roasted sweet potato and butter. Add more heat, brush chicken with Reggae For You Pepper Sauce.

Tips : Keep Meats, seafood at 4°C or lower until ready to cook. Do not  combine cooking raw chicken and other raw meats on grille, at the same time. Always cook chicken, well done to avoid food borne illness.
